Mmmmmoderation: Kale + Egg

I spent a lot of time over the last couple of days on my mom's couch. And by that, I mean I didn't move from the couch. And by that, I mean I DID NOT MOVE. Except to go to the bathroom and to get food, so I could eat on the couch. And sleep on the couch. So that was great. I ate apple fritters, chicken curry, chinese, french toast, etc. I also did no work. It was a time of gluttony and rest. So now I'm over that as is my family. (I get really demanding when I'm glued to the couch.) Anywho, I headed back to LA today to start work again and am back on my "lets-do-something" train. Took Sophs for our daily hike, lifted some weights with Jefferson, and hit up Trader Joes for some healthy goodness in addition to going to a work meeting that last three hours. Here's my post-work out snack/late lunch recipe: Balsamic sauteed kale with a thyme baked egg.




Ingredients:
- A couple of handfuls of kale
- A couple dashes balsamic
- An egg
- Fresh thyme sprigs
- Olive oil
- Salt and Pepper

1. Preheat pan with olive oil, throw in kale. Sautee and add balsamic. Cook until balsamic is burned off and kale is wilted. Add salt and pepper to taste.
2. Put a bit of oil in a ramekin. Throw egg, thyme and pepper in there. Throw it under the broiler until cooked to your taste. I like it runny over the kale. Yummmm.
3. Assemble. Inhale.

Champagne Toasts and Goals

Usually I make intense lists of my New Year's Resolutions. This year, however, I have two:

1. Think less: I spend far too much time worrying, planning, fretting, thinking, etc. I overanalyze far too much. I weigh pros and cons, the best approaches, the consequences, and then never come to a decision. This year, I don't want to lose time overthinking things.

2. Act more: Related to the thinking bit, I spend a lot of time planning and wondering and a lot less time acting. I plan workouts that I never do. I plan trips, but then get overwhelmed. I make lists of books I want to read and then never read them. This is dumb. I want to just get up and do things. I want to blog, write, exercise, spend time with friends, be more efficient with work, and be more impulsive about the things that make me happy.

In other news, I started a 21 day elimination diet. It's gluten-free, soy-free, and dairy-free; also no alcohol and no coffee. Since before finals, I have been self-medicating with lots of rich food, too much caffeine and wine. Bad news bears for my energy level, my skin, and my state of mind in general. I just want to be more mindful of my eating habits and work on being more sustainable as well. I'm on my second day. I cheated already a bit last night with a glass of wine (or two) during a game of charades, but today has been good.

The rest of my vacation has been spent with all my lovelies, including Lauren, my best friend who is visiting from Japan. I also have been able to catch up with Rahia, Jacob and Larissa, go out with Christina, Ellie, and Evan, be inspired by high school friends (esp. NJ), and just loving my family.

Other things this year: more shows (inclu Coachella and OSL???), a yoga retreat, NYC, maybe a trip to the Pacific Northwest and hopefully, Japan to visit my bestie.

Gearing up for a full day tomorrow - yoga, grocery shopping, laundry, cleaning my car and finally finishing a lingering work assignment (and getting started on another one :-))

{10 Days}

I come home Sunday, March 27 at 2:50 pm. I don't have a ride home from the airport yet (any takers?) but I am sooooooo excited to be in sunshine and warmth... so let's talk plans - what am i excited for?

1. Seeing my family. Obvs. They are hard to live with, but even harder to live without.
2. Committing to law school - so I can sleep easy for the next three years
3. Coachella!!! Need I say more?
4. Santa Cruz - Verve, Westcliff, Betty's, etc...
5. Thrifting with NJ
6. Coffee in my mom's garden
7. The beach.
8. Driving. I miss driving.
9. Being reunited with... my DSLR... it's been too long.
10. Seeing you. And you know who you are. :-)

Things that will be hard for me:
being a billion miles away from Leiley, making plans with leiley, going out with leiley, drinking tea with leiley, laughing with leiley, singing with leiley, going to the library with leiley.... she made me write all this, but i will miss the little beeze and of course, maya, alina and elisa. obvs.
